The problem is, that planning is not something that can be done afterward. But only ahead of time - unless you want to throw away all assumptions about moments following each other. .
A prokaryote cannot plan to evolve in a human being. It cannot even plan whether or not it is in existence the next minute. So if planning were to occur it naturally points to something that must do the planning beforehand. Now who or what could that be? It cannot be the animals themselves. It cannot be humans. What could it be, except for a timeless Supreme being?
As for random processes having big impacts, there is nothing strange about it. For instance, think of the times when big diseases like the plague and Spanish flu broke out. You can attribute that to many things, including apparently random climate conditions.
