I would try bear meat, snake meat and have had the opportunity to try alligator meat but just haven't yet. I will next opportunity.

I have escargot every time I go to a restaurant known for good escargot, I love it. I'd try most anything so long as it's not an animal being endangered for the sake of a delicacy such as bears.

I didn't realize bears were being killed for that reason. Maybe I won't try the bear.

They also kill bear for other reasons such as their fur and gallbladder which is used in Chinese Medicine I believe.
In all honesty, I don't like the idea of eating anything anymore unless it's been farmed at some level. Arguments can be raised about eating cow, pig, chicken, etc., but these are farmed animals which are bred to be eaten.
I'm very much on the border with fish consumption because we're slowly poisoning our waters in some areas while others are being affected by global warming which may or may not be completely mans fault. I'd feel much better about eating fish more if it too were farmed because at the rate we're going, we'll have no sea life left for our children's children.

Overfishing is a huge problem. And quite a few western nations send their fishing fleets to the coasts of Africa and Asia, so the local populations (often extremely poor, and highly dependent on fishing) face hardships as a result.

I will eat local fish since I live in a fishing area but mostly I just eat pork, beef and chicken.

If I had a stream outback to pull fish from then I'd eat fish all the time but since I don't I'll only eat it now and again.
I'm not a big fan of flash-frozen fish anyway, it just doesn't taste as fresh as a fish pulled from a stream.

I love horse meat, horse steak is pretty expensive though, so I eat it rarely. I mainly love it since it's very lean, near to no fat on it, the younger the horse, the better. It has a very rich taste and fine thready texture to it. Kinda like pure beef without the fat that has been fried extra long.
It's not true that it requires stewing, actually I like it best when I simply fry it in a pan (not too thick a slice). I do eat smoked horsemeat on bread regularly. I never knew it was a typical european thing to eat.
