Are your cupboards loaded with canned or packaged foods, spices, etc. or are they pretty bare?

What kinds of essentials are you never withouth?

I have a boat load of spices and most essentials. I am usually lacking the ingredient that spoils when I most want to cook that something special. My pantry is full of canned goods and prepackaged stuff. My refrigerator is pretty bare. Only two of us here most of the time so no need for lots of food.
