1 cup sour cream
1/4 cup canned milk 2 eggs 1/2 cup melted butter Beat very well, then add: 4 tsp. baking powder 3 cups flour Pinch off balls size of egg and roll out flat. Fill with vegetable mixtures or fruit. Bake on cookie sheet at 425 degrees until light golden brown. FILLINGS No. 1 - Boil potatoes until tender. Mash fine and add salt to taste. Cool slightly and add 1 beaten egg. Use 1 heaping Tbsp. for each perogi No. 2 - Peel beets and grate fine. Put into saucepan with a little butter and cook until tender, stirring so it does not burn. Add salt and a little sugar. No. 3 - Cook Italian or kidney beans until soft. Mash and add a bit of salt and sugar. Add 1 beaten egg to each cupful and use as the others. No. 4 - Use cottage cheese to which you add salt and egg. Add 1 egg to each cup of cottage cheese. No. 5 - Boil pumpkin. Season and fry as the beets above. No. 6 - Fry sauerkraut in butter and use as above. No. 7 - Boil peas until tender. Drain and mash. Salt and butter to season and add 1 tsp. sugar to each cupful. Use as above. ------------------ I have only eaten the ones with the potatoes and the ones with cottage cheese, which are Great!

Luba,
Wow - these are very different than the ones I make! I learned from my grandmother. We use mashed potatoes with cheese or sauerkraut. She also uses leftover dough to wrap around prunes. If I get the time to make real food, maybe I'll try some of the versions you listed! newstart |

*gasp* I never met anyone else before who even knew what Perogi's were. My father used to make them when I was a child and I just loved them. He would make them with the cottage cheese filling.

There is another thread here that talks about these things but I still don't know what they are. Never heard of them before. Guess I will have to do some research. What nationality are they from? Since Luba is Russian and she was the first one to mention them I assume they are from Russia. Yep, definitely need to do some research now.

Okay, I did a little research and found this Wikipaedia page. I think I will have to try to make some one of these days. They sound good.

According to Wikipaedia they are both. Origins are mainly Eastern Europe. I am actually surprised I haven't heard of them since my inlaws are of Czech background.
