I really think this is all the answer you need. I don't know about your boyfriend, but most men are far more immature than their partners. It may be that you are as mature as most men aged 26 and up. Look how many geezers drive Porche's, Corvette's, etc. Many men are just big boys that may never fully mature, I may be their shining example in fact.
As far as your lease on life and attitude, don't sweat it. Consider it a gift that you don't take things too seriously and try not to lose it as you get older.
I think I'd have a lot more trouble if you were 16 and he was 26 but you're only 6 years apart, some of my friends and their spouses are 11 years apart.
Personally, I say go for it.
